E•’lo•te was launched by Genaro Rodriguez and Marie Aldebert as a quaint, roadside food stand in San Diego’s North County area of Valley Center in 2016. Early in 2022, they opened their new location inside Old Town Urban Market. E•’lo•te serves a menu of fresh roasted corn elote (corn covered in crema, Mexican spices, lime, and Cotija cheese), available on a stick and in a cup, as well as frequently-changing flavors of agua fresca.
